Mitch is a recently qualified chef, working in the Peruvian restaurant Uma at Pan Pacific Hotel. Prior to undertaking an apprenticeship as a chef Mitch was freelancing as a sound technician for a couple years before finding his passion for cooking. Mitch has an interest in cultures and how food plays a large role in the various associated traditions related to these lifestyles. Mitch admits the life of a chef can be very difficult at times, however the opportunities for growth and knowledge can be endlessly rewarding. In his spare time, Mitch is loves to experiment with new ingredients and foods to create unique recipes, which he writes down in his personal book!
